Hilco Corporate Finance Announces Sale of One Table Restaurant Brands

Hilco Corporate Finance (HCF) served as the exclusive investment banker to One Table Restaurant Brands (One Table) in its sale to Breakwater Management as part of a chapter 11 section 363 process completed in November 2024.

Formed in 2021 through the combination of Tender Greens and Tocaya Modern Mexican (Tocaya), One Table operated 24 Tender Greens and 15 Tocaya locations in California and Arizona as of July 2024. Tender Greens is renowned for its seasonal menus crafted from fresh, sustainable ingredients, offering guests a wholesome dining experience. Tocaya features a vibrant, health-focused Mexican cuisine concept with customizable dishes and a robust selection of organic options.

Challenges in the wake of the COVID-19 pandemic, coupled with persistent inflationary pressures, damaging legal settlements and disruption caused by 3rd party delivery agreements, hindered One Table’s financial performance and ability to meet debt obligations. One Table engaged HCF in June 2024 to execute a sale process to maximize the value of the enterprise.

One Table filed for bankruptcy protection on July 17, 2024. HCF promptly executed a comprehensive marketing process to facilitate a section 363 sale, contacting over 500 parties during its effort. The business was ultimately sold to Breakwater Management for total consideration of approximately $35 million.
